THE REFINING OF OUR CELLAR MASTER
The American oak barrel having contained a Cognac-based spirit drink increases the aromatics and softens the woodiness, which gives amplitude in the mouth. There are notes of candied fruit, raisins and cinnamon. Thanks to refining, we succeed in melting the tannins and we obtain a gain in roundness.
Bouquet expresses itself on the honey of flowers, the ripe banana and a light caramel, depth of delicate candied fruits.
The palate, initially light and floral, coats the palate. Then appear notes of cooked banana, citrus fruits and cocoa. The finish is unctuous with flavors of cinnamon and raisins.
